Coconut and cocoa vegan French toast

French toast is a versatile dessert that we can prepare with our favorite plant milk flavored to our liking with coconut, chocolate, cinnamon, lemon, vanilla, etc. This year we have tried new vegan French toast recipes and the one we liked the most was the one we prepared with oat milk, a little grated coconut, cocoa and dates.
They are delicious!

The importance of bread in French toast

In the French toast recipe turns dry bread into an exquisite sweet dessert. The most common way is to use the bread that has been left over fromdays to dip it in a flavored milk and then fry it. Homemade bread with sourdough and compact crumb will be our perfect ally, but I am aware that in some places it is difficult to get real bread.

On the other hand, I have seen that some bakeries nowadays sell special bread for French toast. It’s a soft skin and compact crumb bread. This makes the French toast juicier, but the nutritional quality of this type of special bread for French toast is in most cases, doubtful.

People with celiac disease also can make them with a gluten-free bread, either corn bread or other special options.

It is advisable to cut the bread into slices at least 2 cm thick so that the French toast do not break during cooking. Remember that this slice of bread soak it in milk and then fry it in a frying pan, and for this it helps a lot to be thick.

Ingredients for 4-6 persons:

  • 40 g oat flakes
  • 40 g defatted cocoa or chocolate
  • 40g grated coconut
  • 4 pitted dates
  • 1 ripe banana
  • 3 tablespoons of chickpea flour
  • 1 liter of hot water.

Preparation of the coconut and cocoa French toast:

Preparation time: 30 minutes

Let’s go step by step with the whole process. Taking into account the tips described in each section, success will be assured.

1-Prepare the flavored plant milk.

  • Put 1 liter of water at 80ºC in the Vegan Milker container.
  • Put the oats, cocoa, coconut and dates in the filter and place the filter inside the container.
  • Blend for 1 minute until everything is well blended.
  • Let stand 3 minutes. Remove the filter from the bowl, stir the pulp with a wooden spoon and press the pulp with the mortar to squeeze out the last drops.
  • Reserve the milk.

2-Prepare the French toast.

  • While the milk is resting, cut the bread into 2 cm wide slices and place them in a pie tray.
  • Add the warm milk on top of the slices and leave a little on the bottom so that the bread sucks the liquid. 5 minutes later, turn the slices over and let them soak up the milk on the other side. Add more milk if necessary. It’s important to check the texture of the bread so that the crumbs do not fall apart due to excess moisture. For this reason, it is better to add the milk little by little.

3-Prepare the vegan egg.

Put 3 Tbsp. of chickpea flour in a glass with 6 Tbsp. of warm water. Mix well until it has the texture of beaten egg. I like to add banana flavor to this mixture. To do this, mash a ripe banana with a fork until it is mashed and mix it with the vegan egg that we have just made.

Dip the bread slices in the vegan egg and fry them.

4- Fry the French toast

  • Put a finger of oil in the frying pan with a small piece of breadcrumbs. When the crumb is browned it means that the oil is ready to fry the torrijas. Fry a little on each side until golden brown and remove to a plate with blotting paper to absorb the excess oil from the French toast.
  • Sprinkle a little cocoa and grated coconut on top of each toast and present them at the table. I like to eat them warm, but they can also be eaten at room temperature.
