Mango Popsicles

With this mango popsicles recipe we show you how to turn a delicious fruit and plant milk smoothie into a summer refreshment.

Did you know that the mango peel is edible?

Mango is a very tasty fruit. It is a fruit that is usually peeled before eating, but we have discovered that mango peel is edible. It is rich in antioxidants, helps regulate cholesterol and is involved in improving eyesight. It is a soft peel that you can chew nicely, no problem.

In this recipe we will use all the edible part of the mango, that is to say, the pulp and the peel and thus take advantage of all its nutritional contribution. To make the popsicle creamier, we will add avocado and cashew nuts. The refreshing touch with a little coconut, lemon and peppermint is delicious!

Ingredients for 4 mango popsicles:

  • 1/2 liter of water
  • 1 ripe mango with peel
  • 1 tablespoon of coconut oil
  • 35g cashew nuts
  • 35g avocado
  • Mint 6 leaves
  • Lemon wedge

Preparation time:

Preparation time: 5 minutes

  1. Wash the fruit well.
  2. Put the water in the container and the rest of the ingredients inside the Vegan Milker or Emulsionizer filter with the 0.5 disc.
  3. The mango will be the last ingredient to be introduced into the filter to facilitate the blending with the hand blender.
  4. Blend for 1 to 2 minutes until the mixture is well emulsified.
  5. Remove the filter from the blender and continue blending to squeeze out the pulp.
  6. Finish the process by pressing the pulp with the mortar.
  7. Spread the creamy milkshake into the popsicle molds and place in the freezer.

If you don’t feel like the popsicles, you can also drink it as a liquid dessert or serve it with ice cubes as a refreshing and nutritious smoothie ideal for summer.
