Oat Pulp Crepes

We took this oat pulp crepes recipe from Kristan Hochleitner-Specht’s recipe book named “Vegane Palatschinken”. Kristan is a home cooking loving foodtracker who prepares excellent healthy breakfast and snacks.

One of his signature recipes is homemade oat milk made with our invetion Vegan Milker. He prepares delicious crepes with the oat milk pulp that he accompanies with homemade jams. Today we share with you the recipe for the crepes called “Pura Vida”. I hope you like it as much as we do

Oat Pulp Crepes Recipe

The process of preparing the crepes is very simple and the result is exquisite. It helps a lot to have a crepe maker at hand. In case you don’t have this special tool to make the crepes, we will use a small frying pan to be able to flip the crepes without breaking them with the help of a large spatula.

Ingredients:

  • 100g of spelt flour
  • 1/2 teaspoon of yeast
  • 1 teaspoon of apple compote (or your favorite marmalade)
  • 1 teaspoon of syrup
  • 100ml homemade oat milk
  • Oat milk pulp (1 liter)

Preparation:

  1. Mix all the ingredients in a cooking bowl. The resulting texture should be a concentrated or thick liquid.
  2. It’s convenient to process the flour with a sieve so that the mixture is more homogeneous.
  3. Let the mixture stand for at least 30 minutes at room temperature before proceeding to make the crepes.
  4. Spread a thin layer of oil or butter in the crepe maker.
  5. Put it on the fire and heat it to the maximum. This is one of the keys to get nice crepes.
  6. Spread a little of the mixture over the entire surface of the crepes pan.
  7. Let it golden on one side and turn it over carefully to avoid breaking it.
  8. Serve with any sweet or savory topping, depending on the moment.
