Recipe for spicy peppers mashed potatoes
The recipe for mashed potatoes and piquillo peppers is very simple and versatile, ideal for people looking to surprise with new flavors without complications.
Ingredients for 1 serving:
1 cooked potato (medium)
2 piquillo peppers
100 ml of plant milk
1 clove of garlic (1 tablespoon of garlic powder)
1 teaspoon of ground black pepper
A pinch of salt
1 tablespoon of EVOO
A few drops of hot sauce such as habanero, tabasco, etc.
Preparation
Preparation time: 5 minutes
First make the dough by mashing the potato, the piquillo peppers and the plant-based milk in a blender or with a hand blender.
Then add the rest of the ingredients and blend again until a homogeneous puree is obtained.
At the end adjust the texture of the puree by adding more plant milk or a little water.
If we want the puree to be more liquid like a cream or even a sauce, add more liquid and replace the salt.
The piquillo pepper mashed potatoes can be eaten hot or cold. Cold, it is ideal as a dip or to accompany a summer snack. Hot, it can be used as a traditional mashed potato.
Alternatives
If you do not like spicy, you can omit it and make a more traditional mashed potato.
In this recipe I’ve used hemp milk, but you can add any other plant milk. If you have a Vegan Milker at home, you can even make it in several flavors. In case you do not consume plant milks or don’t have a Vegan Milker or any other gadget at hand to prepare the milk at home, may use water instead of plant milk.
To enrich the pepper and potato cream with vegetable protein, just add a handful of cooked legumes (white beans or chickpeas) or a handful of hemp seeds or sunflower seeds. Then fit the texture by adding more plant milk, water or even a splash of oil.
